The Weibel Family has been producing Champagne and premium wines for over 75 years, first in their native Switzerland and since 1939 in California. When Fred E. Weibel, Sr. and his father, Rudolf, came to California, they brought with them classic old-world winemaking techniques and traditions, along with a personal commitment to quality and excellence. This exquisite blend of Chardonnay and French Colombard grapes is grown in the Mendocino County vineyards. Our Castle Rock Pinot Noir is produced from grapes grown in Sonoma County, which is recognized as one of the finest Pinot Noir growing regions in California. Here, the marine influences from the Pacific Ocean provide cooling breezes, providing ideal conditions for Pinot Noir grapes, characterized by rich crisp fruit flavors. This elegant, well-balanced wine offers aromas of red fruit and spice. On the palate, there are flavors of plum and cherry with oak nuances, with a long and harmonious finish.

From Medocino County, this Merlot has toffee and cinnamon aromas, with rich black cherry, black tea, and dark chocolate flavors on the palate. The finish is smooth, with a velvety texture and lingering black cherry flavors.

Coupled with a deep ruby-purple color, the aroma has a very distinctive blackberry component that is layered with hints of clove and mocha spiciness. The fruit on the palate has a richness and density that is supported by substantial levels of tannins. A roasted heavy toast oaken finish lingers for an extended period.

Using a "cap and drain" method where the fruit is allowed to sit on the skins for 6 hours, our White Zinfandel has a rich pink color that announces that this is a special wine. On the nose there are bright aromas of strawberry and cherry, both of which are exhibited on the palate, along with flavors of ripe watermelon.

This wine is the result of blending 100% Monterey grapes from two of the best vineyards in California, Paraiso Springs Vineyard and Santa Lucia Highlands, Monterey. This 2004 vintage reveals aromas of apricot, honey, and wildflowers. The rich mouth greets the palate with fresh fruit flavors of pear and green apple. This elegant wine balances natural acidity and sweetness.

The color is of light straw. Aromas of grapefruit, lemon, lime and peach fuse with a subtle flintiness and hints of gooseberry. This 2005 wine is medium bodied, yet crisp and refreshing. Tangy citrus and pear flavors found on the pallet lead to a clean short finish free of any bitterness.

This unoaked 2003 Chardonnay from Medocino County was fermented and aged without using oak to preserve the delicate fruit character. It has fragrant impressions of pineapple, pear, and ripe apple in the aroma, and nuances of pear, ripe apple, limeade, and grapefruit in the flavors.

This 2005 Chardonnay is a medium straw color. Peach, pear, pineapple, mango and tropical fruit aromas are accompanied with undertones of vanilla oak. The wine is rich, mouth coating and slightly tangy. Flavors of sweet pear, pineapple and vanilla oak are abundant and linger in the wine's lengthy finish.
